Award Winning Chocolate Cake
Ingredients
- 535 g or 18.8 oz Chocolate Cake mix about 2 & 1/2 cups but a scant more
- 3 eggs egg free- omit eggs & add 3 Tablespoons of water to replace eggs
- 2/3 cup oil
- 1 cup water
- *weight of mix is a preference over cup method
Instructions
- Mix all ingredients in stand mixer for about 1 minute.
- Spray cake pan with non-stick spray or use cupcake liners (2, 8 inch round pans for cake OR 12-18 cupcakes filled half way with batter)
- Bake at 350 degrees (25-30 minutes for cake, 15-20 minutes for cupcakes)

I think the Gluten Free Version is what Marleena is referring to. It is better than ANY other REG or Gluten free cake mix❣️

I’m sorry a scant more is a little confusing. It just means a little bit more but not really anything measureable. Yes, the cake mix is our proprietary blend of the Chocolate Cake mix. This is what is in the eRecipe book when you purchase the recipe. Enjoy and happy baking!
I loved your cake mix and made it several times with rave reviews. Then when you stopped selling the mix, I bought the recipe and have tried making the cake three times. Each time it’s been flat, doesn’t rise like the mix did. The last time I bought brand new xantham gum and baking soda but it wasn’t any better. I’m so disappointed because with the box mix it was just like a regular cake, only better!

I’m sorry to hear you are having issues with the cake recipe. Try weighing the ingredients. Sometimes that makes a difference. It also sounds crazy but try a different cocoa powder. When we were looking at possibly using a new cocoa powder in our test kitchen, we had some issues. You are the first I’ve heard having issues. Keep me updated!
