Chocolate Chip Cookie Bars
We lovingly call these "Magic Cookie Bars" because it seems like magic that something this yummy could be gluten free AND vegan (that means dairy and egg free too!).
Ingredients
- ¾ cup white sugar
- ¾ cup brown sugar
- 1 cup oil
- ⅓ cup tofu (smashed) silken preferred
- 1 tsp vanilla extract
- 2 tbsp water
- 3 ½ cup Sun Flour Mills Whole Grain Flour
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ tsp baking powder
- 1 ¾ tsp xanthan gum
- 1 cup chocolate chips
Instructions
- CREAM together white sugar, brown sugar, and oil.
- BLEND together tofu, water, and vanilla in a blender or food processor.
- ADD tofu mixture to sugar mixture and mix until incorporated.
- ADD dry ingredients to the wet ingredients.
- MIX in chocolate chips.
- BAKE for 15-25 minutes a 350° F oven.
