In a saucepan over medium heat combine sugar, corn starch, and salt
While stirring slowly add rice milk
Stir constantly until mixture is bubbly
Cook for 2 minutes, remove from heat
Stir a small amount into the well beaten egg yolks, then immediately add yolk mixture to the hot pudding mixture
Return pan to heat and cook 2 more minutes
Remove from heat and add chocolate chips, butter, and vanilla
Stir until smooth
Transfer pudding mixture into Sun Flour Mills chocolate cookie pie crusts
Top with dairy free whipped cream
