Lemon Bars
Ingredients
- 1 prepared recipe shortbread cookie dough
- 3 eggs
- 1/2 cups white sugar
- 2 Tbsp cornstarch
- 1/4 cup lemon juice
- 1/2 cup powdered sugar for decoration
Instructions
- Prepare shortbread cookie dough recipe as directed
- Preheat oven to 375 degrees
- Grease a 9x13 inch baking pan
- Put the shortbread cookie dough into the pan and press to spread
- Bake for 10 minutes
- While crust is baking, whisk together eggs, sugar, cornstarch, and lemon juice until frothy
- Pour lemon mixture over the hot crust
- Return pan to oven and bake for an additional 20-25 minutes or until light brown
- Cool and dust with powdered sugar
