Lemon Cake
Ingredients
Dry ingredients
- 2 cups Sun Flour Mills Pastry Flour
- 2 tsp baking powder
- 1 1/2 tsp xanthan gum
- 1 tsp baking soda
- 1 tsp salt
- 3 Tblsp instant vanilla pudding mix dry
- 1 cup white sugar
Wet ingredients
- 1/4 cup lemon juice
- 2 Tblsp finely grated lemon peel
- 1/2 cup water
- 3/4 cup oil
- 4 large eggs
- 2 tsp vanilla extract
For frosting
- 8 oz cream cheese at room temp
- 1/2 cup butter at room temp
- 2 cups powdered sugar
- 2 tsp finely grated lemon peel
- 1 tsp vanilla extract
Instructions
- Sift dry ingredients
- Add wet ingredients one at a time
- Beat on Low speed for 2 minutes
- Bake at 350 degrees for 15-20 minutes
- For frosting: in a mixing bowl beat ingredients on high speed with hand or stand mixer for 2-3 minutes until right consistency
- Frost cupcakes or cakes

Yields 24 cupcakes or 2 8" rounds
