Pumpkin Cake
Ingredients
- *573 g or 20.2 oz Pumpkin Cake mix 2 & 2/3 cup
- 3 eggs egg free- omit eggs & add 3 Tablespoons of water to replace eggs
- 1 1/3 cups canned pumpkin
- 3/4 cup oil
- *weight of mix is a preference over cup method
Instructions
- Mix all ingredients in stand mixer for about 1 minute.
- Spray cake pan or bread pan with non-stick spray or use cupcake liners (2, 8 inch round pans for cake OR 12-18 cupcakes filled half way with batter OR 2 bread loaf pans filled half way with batter)
- Bake at 350 degrees (25-30 minutes for cake, 15-20 minutes for cupcakes, 40-50 minutes for bread)
