Red Velvet Cake
This GF Red Velvet Cake is perfect for any occasion, whether it be Valentine's Day, a birthday, or anniversary. The red of the cake is deep and rich with a moist and fluffy crumb that is truly decadent!
Ingredients
- 2 cups Sun Flour Mills Pastry Flour
- 1 1/2 cups white sugar
- 3 Tbsp cocoa
- 1 tsp xanthan gum
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup oil
- 1 oz red food coloring
- 4 large eggs
- 1 1/2 cups dairy-free milk or milk
- 2 tsp vanilla extract
- 2 tsp lemon juice
Instructions
- In a large bowl sift together Sun Flour Mills Pastry Flour, sugar, cocoa, xanthan gum, baking powder, baking soda, and salt
- To the dry ingredients add oil, food coloring, eggs, half of the milk, and vanilla extract
- In a separate bowl mix half of the milk and lemon juice and let sit for 3 minutes before adding to the rest of the ingredients
- Mix all on high speed for 2 minutes
- Spray 2 pans with non-stick spray
- Bake at 350 degrees in two 8x8inch cake pans for 20-25 minutes
